Our goal is to meet the standards of care and expectations of each community we partner with. Our consultant dietitians promote proactive nutritional management, positive team work and respect. Marnie Claxton is the founder and co-owner of Claxton Dietetic Solutions, LLC. Marnie received her Bachelor of Science Degree in Human Environmental Studies and Dietetics from Southeast Missouri State University. She then completed her Dietetic Internship at St. John's Hospital in Springfield, IL and has been practicing as a Registered Dietitian for fourteen years. Marnie's career focus has been in Geriatric Nutrition and Food Service Management. During her career she has worked as a critical care dietitian, facility dietitian in long term care communities, and held upper level management positions such as Clinical Nutrition Manager, General Manager of Dining in a skilled and assisted living home, and Dining Director in a continuum care retirement center. Awards she has received include Sodexo Senior Services Dietitian of the Year, Manager of the Year for Recruitment and Retention of People, and National Nutrition Leadership Conference Honoree.
Brenna Ross is a consultant dietitian for Claxton Dietetic Solutions, LLC. Brenna received her Bachelor of Science Degree in Nutrition at the University of Tennessee. She attended Marshall University in Huntington, West Virginia and received a Master of Science Degree in Dietetics in conjunction with completion of her Dietetic Internship. Brenna specializes in Geriatric Nutrition and Long Term Care Consulting, menu planning, nutrition education and wellness.
Barbara Lescher is a Consultant, Certified Dietary Manager, and Certified Food Protection Professional for Claxton Dietetic Solutions, LLC. Barbara has over 25 year of experience in food service management and is a Certified Serv Safe Instructor. Her areas of expertise include menu development and recipe analysis; nutrition software development; policy and procedure development; staff development and training; QA programs, dietary audits, budget analysis, systems development and interim CDM coverage.
Amanda is a Consultant Dietitian and the Clinical Trainer for Claxton Dietetic Solutions, LLC. Amanda received her Associate of Science in Culinary Arts and Bachelor of Science in Culinary Nutrition from Johnson and Wales University. She then completed her Dietetic Internship at Massachusetts General Hospital in Boston, MA. Amanda specializes in food service management, long term care clinical nutrition, and staff training and development.
Benjamin Claxton is co-owner of Claxton Dietetic Solutions, LLC with his wife Marnie Claxton. Ben received his Bachelor of Science Degree in Wildlife and Fisheries Science from The University of Tennessee Knoxville. He currently practices as an Environmental Scientist and Biologist while assisting with project management and development of Claxton Dietetic Solutions, LLC. Ben's interest and passion lies in ensuring the food, water and fish we consume is safe, accessible and sustainably produced.
